Tomato Prawns Indo-Thai style curry!


Prawns a big bowl
Red Curry Paste 2tbsp
1 cup Coconut Milk
Water as required
Green chillies 2
1 cup Tomatoes chopped

For seasoning:
Lime leaves 2
Lemon grass chopped 1 tsp

For Curry paste :
1 tsp turmeric
1tsp tsp cumin
2 tsp dried crushed red pepper
1/2 tsp grated lime peel
2tsp chopped fresh ginger

Clean the prawns, and Fry them in oil for few seconds and remove them onto a plate. In the same pan, put the oil and season with lemongrass, lime leaves and curry paste and fry for a few seconds to release the flavours . Add the coconut milk and water, green chillies slit into halves and simmer for few mts. Serve the prawns by arranging them on a plate and pouring the curry sauce over them. Garnish with coriander leaves & it's ready to serve with Rice.
