Kesari Bath :Semolina dessert!

Kèsari means saffron, this is a special sweet (dessert) with saffron as one of the flavour inducing ingredients.


Semolina 2 cups
Sugar 1 1/2 cup
water 3 cups
Saffron few strands
1 cup whole milk
4 tbsp. ghee(clarified butter)
1 tsp cardamom powder
2 tbsp. Raisins & cashew nuts


Roast the Raisins & Cashewnuts in the ghee till the colour changes slightly. Remove the raisins and keep aside. to the same ghee add the semolina and fry until it turns golden brown over a low flame. Heat the milk and water in a pan and add the semolina to this and stir well, ensure that lumps are not formed .Add sugar and keep stirring. Add a spoonfull of ghee periodically every few minutes. Add saffron and cardamom powder and mix well. Cook until the ghee separates from the semolina , finally add the raisins & it's ready to serve hot.
